We have infused Higher Ground coffee into our chocolate to create five exciting new flavor combinations. But first some information on the coffee beans we have selected.
The Higher Ground Story
When Spice Rack Chocolates searched for a coffee supplier for this collection, it was important to us that we find a socially and environmentally responsible partner. We believe we found that partner in Higher Ground.
Higher Ground was born through the combination of a desire to produce the highest quality coffee and the hope of improving the act of doing business in today's world. With this in mind, the people at Higher Ground made the decision to roast exclusively Fair Trade, shade grown, organic coffees of specialty grade. That means that all Higher Ground coffees are grown naturally without the use of harsh chemicals and fertilizers, and they represent the very best of the world's harvest. In addition, all their beans are grown under the forest canopy, allowing farmers to preserve ancient forests and natural habitat. Since Higher Ground only roasts Fair Trade coffees, all their beans are grown on family farms and cooperatives, so more attention goes into every bean. Higher Ground doesn't supplement sales of Fair Trade, organic coffee with profits from corporate, large estate coffee. This way, they can consistently do their part to ensure a fair wage for farmers and help them maintain their land and homes for their children and grandchildren. Three pieces of each flavor all colored coded
Yellow—Mexican Chiapas. Grown in the tropical rainforests that characterize the Chiapas region, this delicate coffee offers a light to medium body with mild acidity. Exceptionally complex and flavorful, this Mexican coffee offers a balanced cup with overtones of spices and fruit.
Purple—Peruvian. Peruvian beans are grown at high elevations in the Apurimac River Valley in the central highlands of Peru—this exceptional altitude creates a coffee with a bright acidity. Characterized by excellent aroma and a full body.
Green—Mocha Java Hazelnut. Named after two famous historical coffee regions, Mocha and Java, this coffee is a delightful blend of African and Indonesian beans. A full-bodied dark roast, characterized by floral aromas and wine-like tendencies this blend features a sweet, smooth caramel finish.
Pink—Bolivian Caranavi. Bolivian Caranavi is a complex and flavorful coffee, grown high up in the DeMontaña Coop. Light and refreshing on the palate, it features caramel and chocolate undertones, a fruity aroma and a smooth, nutty finish.
White—Ethiopian Yirgacheffe Harfusa. These beans are grown just west of the town of Yirgacheffe in the small farming community of Harfusa. It has subtle hints of cardamom and vanilla. A full sweet blueberry taste ushers in a delicate soft chocolate aftertaste.
